Microwave Hawaiian Omelette + Banana

easy-recipes.PNGThis is a good way to use up pork or other meats that you make in the crock pot. I happened to try pork breast bones. You get a lot of smaller pieces of pork that are suitable for dishes like this or stir fries. I don’t actually fry my versions. The microwave is my primary cooking device. It’s not just for defrosting or making popcorn. The stove is really only an oven for me now to bake bread and cookies. Pretty much everything else can be done in the microwave or the crock pot.

The Stuff

2 eggs
1 small chunk of pre-cooked pork
½ small banana
8-10 small pineapple pieces
1 tbsp. demerrara sugar

What To Do

Take a stainless steel fork and wipe a dab of margarine or butter all around the inside of the dish. Break the two eggs into the dish and mix it up a little with the same fork. Cut the pork up into little pieces and throw it into the dish. Slice the banana into really thin pieces. Throw it into the dish.

I buy pineapple chunks in those little four packs with juice and use them in various recipes. The juice I just drink mostly and eat the rest of the pineapple as a snack. Cut the pineapple up into tiny pieces and throw it into the dish. Sprinkle th sugar on top. Demerrara sugar is not so highly refined and keeps its flavour by having a higher content of molasses.

Cook on medium for about 4 minutes. The mixture should still be just a little runny and let it stand for a minute or two while you toast some bread. I happened to use whole wheat bread so the finished omelette goes on one piece and I eat the other piece.

Throw the dish and the knife and fork into the sink. In my case, the good news is they always won’t be lonely.
